Lot of us would like to have a go at making preserves but where do you start and how tricky is it? It's actually really easy, you just need the know how and a little equipment to enjoy your favourite fruits all year round.
Here is some idea of what to make with your produce
Jams - This is the most common home made delicacy and is made from crushed fruit and sugar. Adding the lemon juice give the acid which preserves your creation for you. Most people then put their finished jam into some kilner jars to keep it fresh.
Preserves - Your preserve is similar to jam with a couple of subtle differences. You add your sugar but you leave some large chunks in the mixture and cook it until the fruit is reduced to a more syrup like texture.
Marmalade - Usually citrus based and including the rind of the fruit. They are more jelly like in texture than a jam The rind can be bitter so adding sugar cancels this out.
How to select your fruit for preserve making.
Quality is everything when you make a jam or preserve. Bad quality fruit will diminish the flavour and harm your results. Picking fruit before it is ripe of waiting till it is over rips will have less than satisfactory results I could write a whole new article on picking ripe fruit so do your research and find out how to tell if the fruit you are using is ripe or not
Recipes will give you quantities but always use them as a guide not an exact measure. Taste your way when you make it and adjust for your taste buds not the recipe writers!
